In the quiet streets of Pavia, Italy, Francesco Spelta grew up surrounded by the aromas of slow-cooked ragù and fresh bread. Not in a grand kitchen, but at a family table where food was prepared with patience and devotion.

 

As a child, he watched his grandmother’s hands fold pasta dough with almost ceremonial care. That was when he understood: food was more than taste — it was anticipation, connection, a way to pause time.

 

Over the years, that belief became his craft. What began at a family table evolved into a refined culinary journey, originally created for private clients and now shared selectively with distribution partners.
