Our story

Our salmon is born in the pristine waters of Norway and brought to Milan, where it is transformed through an artisanal process guided by craftsmanship, experience, and restraint. Each fillet is hand-marinated, hand-filleted, and dry-cured over three days — a ritual that enhances texture, depth, and balance without masking the purity of the fish.

 

At the heart of the brand is Chef Francesco Spelta, whose career spans nearly four decades in international fine dining and private luxury yachts. His work has always focused on one idea: creating food that speaks quietly, but leaves a lasting impression. From this philosophy came a new vision of salmon — refined, distinctive, and uncompromising.

 

Alongside the Original recipe, Francesco introduced the world’s first coffee-infused salmon — a subtle, elegant expression where flavour is layered, never dominant. The result is a product that stands apart, not through excess, but through precision.

What started as a small idea has grown into a powerhouse of creativity and innovation.

We believe great food should never shout.

At Francesco Spelta, craftsmanship comes before speed, and quality before scale. Every decision — from sourcing to curing — is guided by respect for the ingredient and for the people who will experience it.

Our salmon begins its journey in the pure waters of Norway, selected for its texture, balance, and natural quality.
It is then brought to Milan, where Italian craftsmanship defines its final expression.

 

This meeting of origins is essential: Norwegian purity, shaped by Milanese precision.

Each fillet is prepared entirely by hand and follows a three-day artisanal process:

  • careful selection
  • hand marination
  • precise filleting
  • slow dry-curing

 

Nothing is automated. Nothing is rushed.

This process allows flavour to develop naturally and texture to remain refined and clean.


 

Alongside our Original salmon, we introduced something entirely new: the world’s first coffee-infused salmon.
